15:05 mexican here! 🙋🏻‍♀️ whenever we do this green salsa we use those La Costeña pickled jalapeños and pour some of the vinegar into the blender to both add acidity and thin the salsa. Play with your ratio of that vinegar/lime juice, cilantro does become key to balance it out.

For wrapping the burrito in paper, most places do it diagonally, starting the burrito or sandwich almost all the way in one corner then roll, fold over the side corners, then finish rolling.

Babish, I absolutely love your channel and so happy you came up to G's in my neighborhood. Just a quick note, it is not just north of Harlem or located in Washington Heights. The neighborhood is called Inwood and we are very proud of it and sadly it never gets the recognition it deserves because people somehow always get it wrong in highly watched videos like this.

This is what I like Youtubers and chefs, who travel to different independently owned restaurants and showcase they’re amazing food instead of just sitting in their car and reviewing the flavour of the week at McDonald’s or Taco Bell.  Those fast food giants have all sorts of money to advertise and sell their product whereas small independently owned businesses don’t always have the means to advertise and get the word out.

If chef Angel from G's said there were only those four ingredients in the salsa, maybe he used the cilantro stems in the salsa. Cilantro stems have a TON of water in them and still add that cilantro flavor while also adding liquid. I don't know how you were able to eat his salsa with your cilantro issue, but it sounded divine anyway.

Crazy how different the breakfast burritos are based on your region.  Here in Denver, the traditional style of breakfast burrito is mostly Chili Verde, eggs, meat, and cheese in the tortilla.  You can get potato in them, but they're quite a bit saucier than the burritos you find in california or apparently new york.

The bacon in #5 was probably boiled until fully cooked before they fried it on the griddle. That yields a pretty crispy result without burning.

The jalapeno membranes and seeds ABSOLUTELY hold the majority of the heat. Anyone that says different kicks puppies for fun.

As for cooking bacon strips, I learned early on the adage, "Turn 'em early and turn 'em often".
